That's why we bottled in dark-colored glass to prevent ultraviolet rays from penetrating the bottle. Long-term exposure to light can affect flavor, so store EVOO in a dark cupboard or cabinet to prevent oxidation.
KEEP IT COOL
Store our extra virgin olive oil in a cool, dark place such as a cupboard or pantry. Please avoid storing EVOO next to or above the stove where heat will affect.
KEEP THE BOTTLE CLOSE
Keep the cap securely closed when not in use. Allowing continuous exposure to air will promote oxidation that leads to rancidity.
